Meatless Monday 8

This is actually sort of Meatless Monday 9, since last week I made a quick vegetable soup, but it wasn’t anything out of the ordinary so I didn’t bother to post it!
This week’s recipe came from the food section of Yahoo (again?).  Every so often they turn up some interesting things…

Tomato Bulgur SoupFrom the Food Matters Cookbook by Mark Bittman, this Tomato-Bulgur Soup was pretty quick (though I think it took longer than the specified 30 minutes, but that may have been because my chicken broth was cold) and also pretty tasty.  The flavors were mellow and rich, the tomatoes gave a meaty quality and the bulgur wheat plumped nicely, had a chewy texture, and took up some of the excess liquid in the broth.  We had it with a couple of toasted rolls left over from the Terpsichore lunch tavern.  I’ll also say that the recipe made quite a bit more than the 4 servings it claims – unless they’re really big servings!  Hubs and I both had healthy bowls, we packed a tub for his lunch tomorrow, and still have easily four cups left in the fridge.
