Meatless Monday 6
This week’s meatless meal was pizza! I got a prebaked thin crust from the store (Meijer brand, cheaper than Boboli and you get two crusts per package), some pesto, shredded parmesan, and a ball of mozzarella cheese.
For baking, I rubbed the crust with a cut clove of garlic, brushed with olive oil, and then topped with the pesto, cheeses (including some crumbled feta I had in the fridge), and some diced cherry tomatoes. I think I could have added more tomatoes, but overall it was pretty tasty! Baked it on the back of a baking sheet since I don’t have a pizza stone and broiled for a few minutes at the end to make the top brown and bubbly.
