Meatless Monday 5
This week I adapted a recipe for lasagna roll ups – basically lasagna, except that instead of layers each individual noodle is rolled around a filling of cheese and tomato. In the original recipe the sauce includes meat, but since it’s Meatless Monday I left that out and just went with a combination of a jar of spaghetti sauce combined with a can of petite diced tomatoes.
The process is a little involved, with having to cook the noodles and then spread each one with the cheese mixture and sauce before rolling them up, but it turned out pretty good! I think it could have baked a little longer before we ate, but overall it was a success. It’s also nice that you can scoop up a fairly self-contained roll to serve instead of having to try to cut through layers.
